Pesto Chicken “Lollipops” Recipe

Ingredients

  • 12 chicken drumsticks
  • Weber Roasted Garlic & Herb Seasoning
  • 4 oz. Fresh basil
  • 1/3 cup pine nuts
  • 2 oz. freshly grated parmesan
  • 3 cloves of garlic
  • 1/2 cup olive oil
  • 1/2 cup heavy cream
  • Salt to taste

Directions

Chicken “Lollipop” Instructions:

  1. To prep the chicken lollipops, cut along the circumference of the thinner part of the bone. Remove any skin and meat from the top knuckle of the bone. Push the meat down along the bone to create the lollipop
  2. Cover the exposed bone with foil
  3. Season the chicken generously with Weber Roasted Garlic & Herb Seasoning
  4. Grill the lollipops standing upright on medium heat for 20-25 minutes, or until internal temperature reaches 165º

 

Pesto Instructions:

  1. Toast pine nuts in a pan over low heat (optional)
  2. Add pine nuts, fresh basil, garlic, parmesan and olive oil to a food processor and chop until smooth
  3. Add heavy cream and salt to taste, blend again
  4. Dunk finished chicken into the pesto and garnish with more basil, green onions and lemon.
