Ingredients

  • tomahawk steak, 2 inches thick, 2 pounds
  • 2 ½ tbsp Weber® Chicago Steak Seasoning, divided
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 shallots, finely minced
  • 2 garlic cloves, minced
  • 8 oz mixed wild mushrooms (shiitake, oyster, maitake), cleaned and sliced
  • 1/4 cup brandy
  • 1 cup heavy cream
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 2 tsp fresh thyme leaves
  • 2 tbsp chopped fresh parsley

Directions

  1. Prepare the grill: Set up for indirect cooking and preheat to medium-high heat (375°F–425°F).
  2. Season the steak: Pat the steak dry, rub with 2 tbsp Weber® Chicago Steak Seasoning, and let rest at room temperature for 20–30 minutes.
  3. Grill the steak: Sear over direct heat for 2–3 minutes per side, then move to indirect heat. Cover and cook until the steak reaches 125°F for medium-rare or 135°F for medium. Remove from the grill, tent with foil, and rest for 10–15 minutes.
  4. Cook the mushrooms: Heat olive oil and butter in a skillet over medium-high heat. Add shallots, cooking until softened, then stir in garlic for about 1 minute. Add mushrooms, cooking until browned and tender, about 5 minutes.
  5. Make the sauce: Pour in brandy and cook until alcohol burns off, about 1 minute. Reduce heat to medium, then stir in cream, Dijon mustard, Worcestershire sauce, thyme, and parsley. Simmer for 3–5 minutes until slightly thickened. Season with remaining Weber® Chicago Steak Seasoning if needed.
  6. Serve: Slice the tomahawk steak off the bone, carve into thick portions, and plate. Spoon mushroom sauce generously over the top, garnish with parsley, and serve immediately.

Tips

For the best flavor, allow the steak to rest at room temperature before cooking and tent it with foil after grilling to retain its juices and let the flavors deepen.
