Pork Tenderloin & Roasted Vegetables Recipe

Ingredients

  • 1 1/2 tbsp olive oil
  • 2 tbsp maple syrup or honey
  • 3 tbsp balsamic vinegar
  • 1 tsp minced garlic cloves
  • 2 tsp chopped rosemary
  • 2 tbsp Weber Garlic Parmesan seasoning
  • 1 pork tenderloin
  • 1/2 lb brussels sprouts, trimmed & halved
  • 1 large parsnip, cut into bite sized pieces
  • 3 large carrots, cut into bite sized pieces
  • 1 medium red onion, cut into bite sized pieces

Directions

  1. Preheat oven to 425 degrees F.
  2. In a small bowl or glass measuring cup, mix together olive oil, syrup, garlic, rosemary and half the Weber seasoning.
  3. Pat the pork tenderloin dry and place it on a baking sheet. Using a brush, paint the pork tenderloin with the marinade until generously coated.
  4. In a mixing bowl, combine the veggies and season generously with olive oil and the remaining half of the Weber seasoning. Surround the tenderloin on the baking sheet with the seasoned veggies and place in the oven.
  5. Cook for about 45 minutes or until the veggies are tender and the tenderloin reaches an internal temperature of 145 degrees F.
