Sausage and Potato Grilled Skillet Recipe

Yield: 8 servings

Grill up this hearty skillet, packed with sausage, potatoes, cheese and loads of flavor.

Ingredients

  • 8 oz fresh Italian sausage
  • 1/4 cup corn oil
  • 1 28-oz. bag frozen hash brown potatoes
  • 1 tbsp Weber® Roasted Garlic & Herb Seasoning 
  • 8 eggs
  • 1/2 cup milk
  • 2 cup shredded cheddar cheese
  • 1 medium tomato, diced
  • 3 green onions, sliced

Directions

  1. Heat large skillet (a 12-inch cast iron is recommended) over direct medium heat (350°-450°F) on grill. Add sausage and cook 4-6 minutes until cooked through, breaking up any chunks. Transfer sausage to a plate.
  2. Heat oil in same skillet. Add potatoes and 1 ½ teaspoon seasoning. Close hood and cook potatoes 15 minutes or until lightly browned, stirring occasionally. Add sausage back to the skillet and stir well.
  3. Whisk eggs, milk and 1 ½ teaspoon seasoning together in a medium mixing bowl.
  4. Form a well in potato/sausage mixture and add eggs. Stir to combine. Close hood and cook for 5-7 minutes.
  5. Stir in half of the cheese and tomatoes. Sprinkle remaining cheese on top of the potatoes. Top with onions. Let cook 1-2 minutes so that cheese is mostly melted.

Tips

Just crumble 16 thawed 1?2-ounce meatballs and stir into cooked potatoes.

Precooked frozen Italian meatballs can easily be substituted for the sausage.
