On a lightly floured surface, unfold pastry sheet. Roll the pastry sheet into 10×15-inch rectangle. Cut into 24 (2 1/2-inch) squares. Press the pastry squares into the mini muffin-pan cups.
Fill each pastry square with 1 teaspoon cranberry sauce and 1 teaspoon goat cheese mixture.
Bake for 10 minutes or until the pastries are golden brown. Let the pastries cool in the pans on wire racks for 5 minutes. Remove baked pastries to serving platter and sprinkle with pistachios.
