1. Let steak rest outside of the fridge 30 minutes before cooking. After 30 minutes, pat the steaks dry and season all sides generously with Weber Chicago Steak seasoning. Then heat a cast iron pan on medium-high heat until pan is very hot.
2. Add avocado oil to the pan and lay the steaks in the cast iron pan. Cook until steak reaches an internal temperature of 130-135 degrees F for medium rare.
3. Remove steak from pan and place 1 tbsp of butter on top and let rest for 5 minutes.
4. Slice steak in to strips and serve with french fries of choice and favorite dipping sauce.
