Weber Flank Steak Pinwheels Recipe

Ingredients

  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons Weber Steak ‘N Chop Seasoning
  • 2 cups arugula
  • 2 lb flank steak
  • 2 cups Parmesan cheese
  • Zest from two lemons
  • Butcher’s twine

Directions

  1. Butterfly the steak, then cover with plastic wrap or wax paper and pound it to 1/4 inch thickness.
  2. Season the front and the back of the steak with Weber Steak N Chop Seasoning.
  3. Sprinkle the cheese over the beef, leaving 1 inch border along the edge. Grate the lemon zest over the cheese.
  4. Add arugula and parsley to a bowl, mix together. Add this mixture on top of the lemon/cheese layer.
  5. Starting from the end closest to you, began rolling up tightly. Tie pinwheels with butcher’s twine. With a sharp knife slice the beef between the twine. You should have about 6-7 pinwheels.
  6. Place the pinwheels on a medium-high heat grill and cook until a thermometer reads 145-150 degrees.
  7. Cut butcher’s twine before serving.
