Ingredients

- 2 tbsp oil
- 2 tbsp Weber® Kick’N Chicken® Seasoning, divided
- 1 lb cooked chicken (shredded or diced)
- 4 tbsp butter
- 1 yellow onion, diced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 cup frozen peas
- 2 tbsp all-purpose flour
- 1 ½ cups chicken broth
- 1 cup milk
- For Biscuit Topping
- 1 can (16.3 oz) flaky biscuits
- 2 tbsp butter, melted
- 1 tsp dried herbs (thyme or rosemary)
This hearty and comforting pot pie features a creamy chicken and vegetable filling seasoned with the bold, zesty flavors of Weber® Kick’N Chicken® Seasoning, all topped with flaky, golden biscuits. Perfect for a cozy family dinner!
Directions
- Prepare Filling: Preheat oven to 375°F. Heat oil in a large oven-safe skillet over medium heat. Add onion, carrots, and celery, cooking for 5–6 minutes until softened.
- Stir in butter until melted, then add flour. Cook for 1–2 minutes, stirring constantly. Gradually whisk in chicken broth and milk. Add 1 tbsp Weber® Kick’N Chicken® Seasoning and stir until the sauce thickens, about 3–4 minutes.
- Stir in shredded chicken, peas, and an additional 1 tbsp Weber® Kick’N Chicken® Seasoning. Mix until combined. Remove from heat.
- Assemble Pot Pie: Place biscuits on top of the filling in a single layer. In a small bowl, mix melted butter with dried herbs and brush over the biscuits.
- Bake and Serve: Transfer skillet to the oven and bake for 20–25 minutes, or until the biscuits are golden brown and cooked through. Let cool slightly before serving.
