Spanish Style Grilled Chicken Romesco

Ingredients
- 1 red bell pepper
- 1 tomato, halved
- ½ onion
- 1 tbsp corn oil
- ¼ cup sliced almonds, toasted
- 1 tbsp minced garlic
- 3 tbsp chopped fresh parsley
- 2 tbsp red wine vinegar
- 2 tbsp capers, drained
- 1 tsp honey
- 4 (4-oz) boneless, skinless chicken breasts
- 2 tsp corn oil
- 1 tbsp Weber® Kick 'n Chicken® Seasoning
Tender grilled chicken seasoned with Weber® Kick'N Chicken® Seasoning brings a zesty kick to this dish, perfectly complemented by a smoky, nutty romesco sauce bursting with charred vegetables and tangy vinegar.
Directions
- Prepare grill: Preheat grill to medium-high heat 375°F–425°F. Brush grill grates clean.
- Grill vegetables: Place bell pepper, tomato, and onion directly on grates. Grill until charred and softened, about 8 to 10 minutes.
- Transfer bell pepper to a plastic bag to steam and cool. Remove skins and seeds; coarsely chop.
- Coarsely chop the grilled tomato and onion.
- Make romesco sauce: Pulse almonds and garlic in a food processor until finely ground.
- Add bell pepper, tomato, onion, parsley, vinegar, capers, and sugar. Pulse 10 to 12 times or until desired texture.
- Set aside at room temperature before serving.
- Prepare chicken: Rinse and pat chicken breasts dry. Drizzle with 2 tsp corn oil, turning to coat. Sprinkle one side with half the Weber® Kick 'n Chicken® Seasoning.
- Grill chicken: Place chicken on the grill, unseasoned side down. Grill over direct medium-high heat for 5 to 7 minutes, turning once halfway through, until cooked through. Sprinkle remaining seasoning on chicken after flipping.
- Serve: Remove chicken from the grill and let rest for 5 minutes.
- Spoon ¼ cup romesco sauce onto individual plates, top with grilled chicken breasts, and garnish with additional chopped parsley, if desired.
Tips & Tricks
- Store remaining romesco sauce in the refrigerator for up to one week.
- Romesco sauce can also be used as a dip for vegetables or a spread for sandwiches!
