Ingredients
- 8 skewers (soaked in water if using wooden skewers)
- 2 lbs chicken breast, cut into large cubes
- 2 red onions, cut into large dice
- 1 red bell pepper, cut into large dice
- 1 yellow bell pepper, cut into large dice
- 1 pineapple, cut into large dice
- ½ cup pineapple juice
- 1 cup Greek yogurt
- ¼ cup Weber® Kick 'N Chicken® Seasoning
- 2 sprigs rosemary
Juicy chicken marinated in pineapple juice, Greek yogurt, and Weber® Kick 'N Chicken® Seasoning, paired with fresh pineapple, bell peppers, and onions for a sweet and spicy grilled delight.
Directions
- Soak skewers: If using wooden skewers, soak in water for at least 15 minutes to prevent burning during grilling.
- Marinate chicken: In a large bowl or resealable bag, combine chicken, pineapple juice, Greek yogurt, Weber® Kick 'N Chicken® Seasoning, and rosemary. Mix well to coat the chicken evenly. Cover and refrigerate for at least 2 hours to allow the flavors to infuse.
- Assemble skewers: Thread marinated chicken, pineapple, red onion, and bell peppers onto skewers, alternating for even distribution and vibrant presentation.
- Prepare grill: Preheat the grill to medium heat, about 350°F. Clean the grates thoroughly and oil them to prevent sticking.
- Grill skewers: Place skewers on the preheated grill and cook for 8–12 minutes, rotating every few minutes to ensure even cooking. The chicken is fully cooked when it reaches an internal temperature of 165°F.
- Serve: Remove skewers from the grill and serve immediately. Pair with rice, quinoa, or a fresh green salad for a complete and satisfying meal.
