Grilled Bacon Brussel Sprouts

Ingredients
- 4 strips thick-cut bacon
- 2 tbsp butter
- 1 lb Brussels sprouts, halved
- ½ cup onion, chopped
- 2 tbsp Weber® Roasted Garlic & Herb Seasoning
Crispy bacon and tender Brussels sprouts cooked with Weber® Roasted Garlic & Herb Seasoning for a smoky, savory side dish bursting with flavor.
Directions
- Prepare grill: Preheat grill to medium heat, 350°F–400°F, and place a cast iron skillet on the grill to heat.
- Cook bacon: Add bacon to the preheated skillet and cook until crispy, about 5–7 minutes. Remove the bacon, chop into small pieces, and set aside.
- Sauté vegetables: In the same skillet with the bacon fat, add butter and let it melt. Stir in the onion, Brussels sprouts, and Weber® Roasted Garlic & Herb Seasoning. Toss to coat evenly. Cook for 8–12 minutes, stirring occasionally, until the Brussels sprouts are tender and lightly charred.
- Combine and serve: Add the chopped bacon back into the skillet, stir to combine, and cook for an additional 1–2 minutes. Remove from the grill and serve warm.
