Directions

  1. Preheat the Grill: Preheat your grill to medium heat for the potatoes and high heat for the steaks. Close the lid to retain heat while preparing the ingredients.
  2. Prepare the Steaks: Lightly coat the ribeye steaks with 2 tablespoons of olive oil.
  3. Evenly season all sides of the steaks with 2 tablespoons of Weber® Chicago Steak® Seasoning.
  4. Let the steaks sit at room temperature for 20–30 minutes before grilling.
  5. Prepare the Potatoes: Place the quartered potatoes in a large bowl, drizzle with 2 tbsp olive oil and 2 tbsp of Weber® Chicago Steak® Seasoning. Toss to evenly coat the potatoes.
  6. Transfer the seasoned potatoes to a vegetable basket.
  7. Grill over direct medium heat with the lid closed as much as possible, cooking for 20–25 minutes.
  8. Turn the potatoes every 5 minutes to ensure even browning and tenderness.
  9. Once cooked, keep the potatoes warm while grilling the steaks.
  10. Grill the Steaks: Increase the grill temperature to high.
  11. Grill the ribeye steaks over direct high heat with the lid closed, cooking to your desired doneness.
  12. For medium-rare, grill for 6–8 minutes, turning once.
  13. Let the steaks rest for 2–3 minutes after grilling to retain their juices.
  14. Serve: Serve the warm, juicy ribeye steaks alongside the grill-roasted potatoes for a perfect pairing. Enjoy!
