Directions
- Prepare Tzatziki Sauce: In a bowl, combine Greek yogurt, grated cucumber (squeezed to remove excess water), dill, lemon juice, and Weber® Roasted Garlic and Herb Seasoning. Mix well and refrigerate until ready to serve.
- Preheat Grill: Preheat grill to 400°F and place a grill pan or griddle on the grates.
- Prepare Lamb Mixture: In a bowl, mix ground lamb, ½ cup feta cheese, Weber® Roasted Garlic and Herb Seasoning, and cumin until well combined. Divide into 4 equal portions and shape into balls.
- Cook Smashed Lamb Burgers: Once the grill is hot, place a lamb ball onto the grill pan. Flatten it with a pita bread using a spatula or burger press until thin. Cook for 5–6 minutes or until crispy on one side, then flip and cook for an additional 1–2 minutes. Warm each pita bread on the grill while the lamb cooks.
- Assemble and Serve: Place each lamb patty on a warm pita bread. Top with tzatziki sauce, cherry tomatoes, cucumbers, arugula, red onions, and extra feta cheese. Serve immediately.
