Sticky Thai BBQ Ribs Recipe

Ingredients

  • 2 racks of baby back ribs, or ribs of your choice

 

Marinade

  • 3/4 C Weber Original BBQ sauce, set extra sauce aside
  • 3/4 C of sweet thai chili sauce
  • 3/4 C soy sauce
  • 2 tbsp thai red curry paste
  • 2 tbsp grated ginger
  • 2 cloves grated garlic
  • pinch of pepper

 

Garnish

  • red chiles, for garnish (optional)
  • chopped peanuts, for garnish (optional)
  • parsley, for garnish (optional)

Directions

  1. If using baby back ribs, take a butter knife to lift the membrane from both racks and remove.
  2. Combine all the ingredients for the marinade in a large bowl.
  3. Place the two racks of ribs on a large baking sheet and brush the wet marinade over both sides of the ribs. Cover with plastic wrap and refrigerate for 2 to 4 hours.
  4. When ready to cook, preheat grill to 300 degrees F.
  5. Remove the plastic covering and wrap the ribs in tin foil to place on preheated grill.
  6. Cook for 3 hours, maintaining a grill temperature between 275 and 300 degrees F.
  7. After 3 hours, remove tin foil and paint on extra Weber’s Original BBQ sauce and let cook for another 10-15 minutes.
  8. After 10-15 minutes, remove from the grill and garnish with chopped peanuts, sliced red chiles, and fresh parsley.
