Ingredients
- 1 zucchini, sliced lengthwise
- 1 yellow squash, sliced lengthwise
- 2 bell peppers (red, yellow, or orange), stemmed, seeded, and quartered
- 1 eggplant, sliced into ½ in rounds
- 1 l red onion, sliced into ½ in circles
- 1 lb asparagus, ends trimmed
- 1/2 cup balsamic vinegar
- 1/2 cup extra virgin olive oil
- 1 tbsp Weber® Garlic Parmesan Seasoning
- 12-14 fresh basil leaves, roughly chopped
A vibrant medley of fresh vegetables marinated in a tangy balsamic and Weber® Garlic Parmesan Seasoning, grilled to perfection, and topped with fresh basil for a simple, flavorful side dish or light main course.
Directions
- Preheat grill to medium heat 375°F –425°F.
- Arrange all the vegetables on a large baking tray.
- In a small bowl, whisk together the balsamic vinegar, olive oil, and Weber® Garlic Parmesan Seasoning. Pour the marinade over the vegetables, reserving 3 tbsp for later.
- Place the vegetables directly on the grill. Cook for 2–3 minutes per side, or until they are just tender and lightly charred.
- Remove the vegetables from the grill and arrange them on a serving platter. Drizzle with the reserved balsamic mixture and garnish with fresh basil.
Tips & Tricks
- For even cooking, slice vegetables to uniform thickness and grill sturdier vegetables (like eggplant and onion) first, adding more delicate ones (like asparagus) later. Use a grill basket to prevent smaller pieces from falling through the grates.
