Ingredients
- 4 tbsp extra virgin olive oil, divided
- Weber® Chicago Steak® Seasoning, divided
- 4 boneless ribeye steaks, 10–12 oz and ¾ to 1 inch thick
- 2 lb new potatoes, large, scrubbed and quartered

Directions
- Preheat the Grill: Preheat your grill to medium heat for the potatoes and high heat for the steaks. Close the lid to retain heat while preparing the ingredients.
- Prepare the Steaks: Lightly coat the ribeye steaks with 2 tablespoons of olive oil.
- Evenly season all sides of the steaks with 2 tablespoons of Weber® Chicago Steak® Seasoning.
- Let the steaks sit at room temperature for 20–30 minutes before grilling.
- Prepare the Potatoes: Place the quartered potatoes in a large bowl, drizzle with 2 tbsp olive oil and 2 tbsp of Weber® Chicago Steak® Seasoning. Toss to evenly coat the potatoes.
- Transfer the seasoned potatoes to a vegetable basket.
- Grill over direct medium heat with the lid closed as much as possible, cooking for 20–25 minutes.
- Turn the potatoes every 5 minutes to ensure even browning and tenderness.
- Once cooked, keep the potatoes warm while grilling the steaks.
- Grill the Steaks: Increase the grill temperature to high.
- Grill the ribeye steaks over direct high heat with the lid closed, cooking to your desired doneness.
- For medium-rare, grill for 6–8 minutes, turning once.
- Let the steaks rest for 2–3 minutes after grilling to retain their juices.
