A modern take on the classic Waldorf salad, this dish features juicy grilled chicken thighs seasoned with Weber® Honey Garlic Rub for a bold, flavorful kick. Paired with crisp apples, celery, raisins, and toasted walnuts, it's topped with a creamy poppy seed dressing for the perfect sweet and savory balance.

Directions

  1. Make dressing: In a small bowl, whisk together mayonnaise, apple cider vinegar, honey, Weber® Honey Garlic Rub, and poppy seeds.
  2. Mix until smooth and well combined. Set aside.
  3. Prepare grill: Preheat grill to medium heat 350°F–400°F. Brush grill grates clean.
  4. Prepare chicken and apples: Lightly brush chicken thighs and apple slices with corn oil.
  5. Generously coat chicken and apples with Weber® Honey Garlic Rub.
  6. Grill chicken and apples: Place chicken thighs on the grill over direct medium heat.
  7. Grill for 15 to 20 minutes, turning once, until the chicken is firm to the touch and no longer pink in the center, with an internal temperature of at least 170°F.
  8. Grill apple slices alongside chicken. Turn apples after 2 to 3 minutes and cook for an additional 2 to 3 minutes until lightly browned but still firm. Remove from grill.
  9. Assemble salad: In a large salad bowl, combine salad greens, sliced celery, raisins, and toasted walnuts. Toss gently to mix.
  10. Top salad with grilled apple slices and sliced chicken thighs.
  11. Serve: Drizzle poppy seed dressing over salad just before serving.
