Ingredients
- Eggplant
- 3 medium eggplants
- 1 tbsp kosher salt
- Garlic Herb Oil
- 1 cup Crisco® Pure Vegetable Oil
- 1 tsp crushed red pepper
- 1 tbsp Weber® Roasted Garlic and Herb Seasoning, divided
- 2 tbsp garlic, minced
- Feta Topping
- 6 oz crumbled feta cheese
- 2 tbsp fresh parsley, chopped
Perfectly grilled eggplant slices are infused with bold flavor from Weber® Roasted Garlic and Herb Seasoning and finished with a rich garlic herb oil and creamy feta topping. This easy, versatile dish is sure to be a favorite at any table.
Directions
- Preheat Grill: Preheat grill to medium-high heat 450°F.
- Prepare Eggplant: Slice eggplants into ½-inch rounds. Sprinkle with kosher salt and layer between paper towels. Press lightly with a cutting board and let rest for 10 minutes to draw out moisture. Pat dry.
- Make Garlic Herb Oil: Heat oil, red pepper, 1 tsp Weber® Roasted Garlic and Herb Seasoning, and minced garlic in a saucepan over medium-low heat until fragrant, about 2–3 minutes. Let cool.
- Prepare Feta Topping: Mix cooled garlic herb oil with crumbled feta cheese. Set aside.
- Season and Grill Eggplant: Toss eggplant slices with half the garlic herb oil and the remaining seasoning. Place eggplant slices directly on the grill and cook for 2–3 minutes per side, until tender and slightly charred.
- Assemble and Serve: Arrange eggplant slices on a platter. Top with the feta mixture and garnish with parsley. Serve warm.
