Ingredients

  • 1 lb shrimp, peeled and deveined
  • ½ lb bay scallops
  • 1 ½ tsp Weber® Roasted Garlic & Herb Seasoning
  • 2 tbsp olive oil
  • 3 ears corn, husked and cut in half
  • 1 lb baby potatoes or red bliss potatoes, cut into 1-inch pieces
  • 2 links andouille sausage, sliced
  • 3 tbsp butter
  • 1 ½ cups light beer
  • 1 tbsp fresh chives, chopped
  • 4 lemon wedges, for serving
An irresistible all-in-one meal with tender shrimp, juicy scallops, savory andouille sausage, and garden-fresh veggies, seasoned to perfection with Weber® Roasted Garlic & Herb Seasoning and grilled for bold, mouthwatering flavor.

Directions

  1. Prepare grill: Preheat grill to medium heat 375°F.
  2. Season seafood: In a large bowl, combine shrimp, scallops, Weber® Roasted Garlic & Herb Seasoning, and olive oil. Toss to coat evenly.
  3. Assemble foil packets: Lay 4 pieces of 16-inch foil flat and rub the center of each with butter.
  4. Divide the potatoes and corn evenly among the foil pieces, placing them in the center.
  5. Top each with the shrimp and scallop mixture, followed by the andouille sausage slices.
  6. Fold the edges of the foil upward to create a shallow bowl, then carefully pour ¼ cup of beer into each packet.
  7. Fold the foil crosswise over the mixture, then roll the edges to seal tightly.
  8. Grill foil packets: Place the foil packets directly on the grill grates. Cover and cook for 15–20 minutes, or until the seafood is opaque, the potatoes are tender, and the corn is cooked through.
  9. Serve: Carefully open the foil packets to release steam. Sprinkle with fresh chives and serve with lemon wedges. Enjoy!

Tips & Tricks

  • For extra flavor, add a pinch of Weber® Roasted Garlic & Herb Seasoning to the foil packets before closing them.
