  • 1½ lb pork tenderloin
  • ½ lb Brussels sprouts, trimmed and halved
  • 1 cup parsnips, cut into bite-sized pieces
  • 1 cup large carrots, cut into bite-sized pieces
  • 1 cup red onion, cut into bite-sized pieces

Directions

  1. Preheat Oven: Preheat oven to 425°F. Line a large baking sheet with parchment paper for easy cleanup.
  2. Prepare Marinade: In a small bowl, whisk together olive oil, maple syrup, balsamic vinegar, minced garlic, rosemary, and 1 tbsp Weber® Garlic Parmesan Seasoning.
  3. Marinate Pork: Pat the pork tenderloin dry and place it in the center of the prepared baking sheet. Brush the tenderloin generously with the marinade, ensuring it is evenly coated.
  4. Season Vegetables: In a mixing bowl, toss Brussels sprouts, parsnips, carrots, and red onion with olive oil and the remaining 1 tbsp Weber® Garlic Parmesan Seasoning. Arrange the vegetables around the pork tenderloin on the baking sheet.
