Ingredients

  • 8 oz fresh Italian sausage
  • 1/4 cup corn oil
  • 1 28-oz. bag frozen hash brown potatoes
  • 1 tbsp Weber® Roasted Garlic & Herb Seasoning divided
  • 8 eggs
  • 1/2 cup milk
  • 2 cups shredded cheddar cheese
  • 1 cup tomato, diced
  • 3 green onions, sliced
Grill up this hearty skillet, packed with sausage, potatoes, cheese and loads of flavor.

Directions

  1. Preheat a large skillet (a 12-inch cast iron skillet works best) over direct medium heat 350°F–400°F on the grill. Add the sausage and cook for 4–6 minutes, breaking it into small pieces as it cooks. Once fully cooked, transfer the sausage to a plate and set aside.
  2. Heat oil in the same skillet. Add potatoes and 1 ½ tsp Weber® Roasted Garlic & Herb Seasoning. Close the grill hood and cook for about 15 minutes, stirring occasionally, until the potatoes are lightly browned.
  3. Add the cooked sausage back to the skillet with the potatoes. Stir well to combine.
  4. In a medium mixing bowl, whisk together eggs, milk, and the remaining 1 ½ tsp of Weber® Roasted Garlic & Herb Seasoning.
  5. Make a well in the center of the sausage and potato mixture. Pour the egg mixture into the well and stir to combine. Close the grill hood and cook for 5–7 minutes, or until the eggs are set.
  6. Stir in half of the shredded cheese and diced tomatoes. Sprinkle the remaining cheese evenly over the top of the skillet mixture and garnish with sliced green onions. Close the hood and cook for an additional 1–2 minutes, just until the cheese melts.

Tips & Tricks

  • For extra flavor, try using smoked sausage or chorizo instead of regular sausage. The smoky or spicy kick will complement the Weber® Roasted Garlic & Herb Seasoning and add depth to the dish!
