Ingredients
- 1.5 lbs smoked brisket, chopped
- 7 tbsp unsalted butter, divided
- 1.5 cups cheddar cheese, grated
- 1 cup Jack cheese, grated
- ½ lb elbow pasta
- 6 tbsp all-purpose flour
- 3 cups whole milk
- 2 tbsp Weber® Roasted Garlic & Herb Seasoning, divided
- ½ cup panko bread crumbs
- ⅓ cup Weber® Sweet & Thick Original BBQ Sauce
A rich and creamy mac and cheese dish elevated with tender smoked brisket, a savory blend of cheeses, and the bold flavors of Weber® Roasted Garlic & Herb Seasoning and Weber® Sweet & Thick Original BBQ Sauce. Perfect for any backyard BBQ!
Directions
- Prepare grill: Preheat the grill to 350°F. Grease a large cast iron skillet with 1 tbsp butter and set aside.
- Combine cheeses: In a bowl, mix the cheddar and Jack cheeses. Reserve 2 cups for the sauce and ½ cup for the topping.
- Cook pasta: Boil pasta in salted water for 10 minutes, drain, and set aside.
- Make cheese sauce: In a saucepan, melt 6 tbsp butter over medium heat. Add flour and stir for 3 minutes. Whisk in milk gradually and cook until thickened, about 4 minutes. Remove from heat and stir in 1 tbsp Weber® Roasted Garlic & Herb Seasoning and 2 cups of the cheese mixture.
- Assemble mac and cheese: Mix cooked pasta, brisket, and cheese sauce in a bowl. Pour into the skillet.
- Add topping: In a bowl, combine remaining cheese, bread crumbs, and 1 tbsp Weber® Roasted Garlic & Herb Seasoning. Sprinkle over the mac and cheese.
- Grill and finish: Place the skillet on the grill and cook for 20–30 minutes, or until golden and bubbly. Drizzle with Weber® Sweet & Thick Original BBQ Sauce before serving.
