Directions

  1. Preheat Grill: Preheat grill to medium-high heat 375°F–425°F, set up for direct cooking.
  2. Partially Cook Bacon: Arrange bacon slices on a parchment-lined baking sheet. Sprinkle with 2 tsp Weber® Southern Comfort™ Whiskey Flavored Seasoning. Bake in a 375°F oven or cook on the grill over indirect heat for 5 minutes, just until some fat is rendered but bacon remains pliable. Let cool slightly.
  3. Prepare Scallops: Pat scallops dry with a paper towel. Wrap each scallop with a half slice of bacon and thread 4–5 bacon-wrapped scallops onto each skewer, or skewer individually for easy serving at parties. Sprinkle scallops evenly with 2 tsp Weber® Southern Comfort™ Whiskey Flavored Seasoning.
  4. Grill Skewers: Place skewers directly on the grill grates. Grill for 3–4 minutes per side, or until scallops are opaque and bacon is crisp. Avoid overcooking to keep scallops tender.
  5. Prepare Butter Sauce: In a small bowl, combine melted butter with the remaining 2 tsp Weber® Southern Comfort™ Whiskey Flavored Seasoning. Brush skewers with the seasoned butter before serving, and provide additional butter sauce for dipping.
