Greek Veggie Burger Recipe

Ingredients

  • 2 cans of chickpeas, drained
  • ½ cup pistachios, shelled
  • 1 cup of fresh parsley
  • 1 cup of fresh cilantro
  • ¼ red onion
  • 1 jalapeño
  • 2 tbsp Weber Ultimate Garlic or Weber Roasted Garlic and Herb Seasoning
  • ½ lemon, juiced
  • ⅓ cup flour
  • 3 tbsp mayonnaise
  • 3 fresh pitas, halved
  • Suggested Topping: Hummus, Tzatziki, Tomato, Cucumber, Red Onion

Directions

  1. Combine chickpeas, pistachios, parsley, cilantro, red onion, jalapeño, lemon juice & Weber Seasoning in a food processor and turn on high for 1 min.
  2. Transfer to a medium size bowl, add flour and mayonnaise & stir to combine.
  3. Divide the mixture into 6 even portions and form into patties with your hands.
  4. Place patties into the freezer for 20 min to chill.
  5. Preheat the grill to 550-600 degrees and prepare grates with olive oil.
  6. Brush patties with olive oil and grill for 10 minutes, flipping halfway through.
  7. Brush pita with olive oil and add to grill for final 3 minutes, flipping halfway.
  8. Build your veggie burgers with the toppings of your choice.
