Cut the salmon into large chunks, and put about a quarter of it into a food processor with the Dijon. Pulse until salmon becomes pasty.
Add the remaining salmon, and pulse the machine on and off until the fish is chopped and well combined, leaving small chunks of the salmon. Be careful not make the mixture too fine.
Stir in mayonnaise, Weber® Gourmet Burger seasoning, bread crumbs, and scallions. Shape into four burgers. Brush each side lightly with olive oil.
Heat grill to 350. Thoroughly clean grill grates. Place salmon burgers on grill and cook each side until golden brown, about 3-4 minutes per side. If the burger is sticking to the grill it is not ready to flip, and leave on for an additional minute or until it comes off easily. Be careful not to overcook!
Assemble to burger on the bun and serve with avocado, tomato, lettuce, and mayonnaise.
