Grilled Seafood Boil Foil Packets Recipe

Yield: 6 Servings

Garlic and herbs and a squeeze of lemon are all you need to make a classic seafood night.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1/2 lb bay scallops
  • 1 1/2 tsp Weber® Roasted Garlic & Herb Seasoning 
  • 2 tbsp olive oil
  • 3 ears corn, husked and cut in half
  • 1 lb baby potatoes, or red bliss cut into 1-inch pieces
  • 2 links andouille sausage, sliced
  • 3 tbsp butter
  • 1 1/2 cup light beer
  • 1 tbsp fresh chives
  • 6 lemon wedges for serving

Directions

  1. Preheat grill to 375 degrees F. In a large bowl add shrimp, scallops, Weber® Garlic Herb seasoning, and olive oil; toss to coat.
  2. Lay 6 12-inch pieces of foil flat and rub with butter. On each piece of foil place evenly divide potatoes and corn.
  3. Top each with shrimp and scallop mixture, and andouille slices.
  4. Fold edges upward creating a wall, and carefully pour ¼ cup beer in each packet.
  5. Fold foil packets crosswise over the mixture to completely cover.
  6. Roll top and bottom edges to seal them closed.
  7. Place each packet directly on grill; cover. Grill 15-20 minutes, or
    until seafood is cooked through and vegetables are tender. Open
    and sprinkle with chives before serving
