Directions
- Prepare Grill and Steaks: Preheat grill to medium-high heat (375°F–425°F).
- Let steaks rest at room temperature for 30 minutes. Pat the steaks dry and season all sides with 2 tbsp Weber® Chicago Steak® Seasoning. Lightly brush with avocado oil.
- Grill Steaks: Place steaks directly on the grill grates. Sear for 4–5 minutes per side, or until the internal temperature reaches 120°F for medium-rare. Adjust cooking time for desired doneness.
- Remove steaks from the grill, top each steak with 1 tbsp butter, and let rest for 5–10 minutes to allow juices to redistribute.
- Prepare Hand-Cut Fries: Peel the potatoes and cut into ½-inch thick strips. Rinse in cold water to remove excess starch, then pat dry thoroughly.
- Heat vegetable oil in a deep fryer or large pot to 325°F. Fry potatoes in batches for 3–4 minutes until softened but not browned. Remove and drain on paper towels.
- Increase oil temperature to 375°F. Fry potatoes again for 2–3 minutes until golden brown and crispy. Drain, sprinkle with 1 tbsp Weber® Chicago Steak® Seasoning, and toss to coat.
- Prepare Zesty Dipping Sauce: In a small bowl, whisk together mayonnaise, Dijon mustard, ketchup, Weber® Chicago Steak® Seasoning, and lemon juice until smooth. Chill until ready to serve.
- Serve: Serve grilled steaks alongside seasoned hand-cut fries and the zesty dipping sauce for an unforgettable, bistro-style meal. Enjoy!
