Ingredients
- 2 lb flank steak
- ¼ cup fresh parsley, chopped
- 3 tbsp Weber® Steak 'N Chop™ Seasoning
- 2 cups arugula
- 2 cups Parmesan cheese, grated
- 2 lemons, zested
- Butcher’s twine
Tender flank steak rolled with fresh herbs, arugula, lemon zest, and Parmesan, seasoned with Weber® Steak 'N Chop™ Seasoning, and grilled to perfection for an impressive, flavorful dish.
Directions
- Prepare grill: Preheat grill to medium-high heat, 375°F–425°F.
- Prepare steak: Butterfly the flank steak by slicing it horizontally through the center, being careful not to cut all the way through. Open it like a book, cover with plastic wrap or wax paper, and pound to an even ¼-inch thickness. Season both sides with Weber® Steak 'N Chop™ Seasoning. Sprinkle Parmesan cheese evenly over the steak, leaving a 1-inch border, and grate lemon zest over the cheese.
- Layer and roll: Toss arugula and parsley in a bowl and spread evenly over the cheese and lemon zest. Tightly roll the steak from the edge closest to you into a log. Tie it at 1–2 inch intervals with butcher’s twine and slice into 6–7 pinwheels.
- Grill pinwheels: Place pinwheels on the grill and cook for 6–8 minutes per side, or until the internal temperature reaches 145°F–150°F for medium doneness.
- Serve: Remove pinwheels from the grill, cut and discard the butcher’s twine, and serve immediately. Enjoy the vibrant flavors in every bite!
- Cut butcher's twine before serving.
