Sweet and Smoky Rib Tacos

Ingredients

  • 1 ½ lbs boneless country-style pork ribs
  • 3 tbsp + 1 tsp Weber® Bold Sweet Smoky Seasoning, divided
  • 2 tbsp olive oil, divided
  • 2 tbsp unsalted butter, melted
  • 1 cup red bell pepper, thinly sliced
  • 1 cup yellow bell pepper, thinly sliced
  • 1 ½ cup red onion, thinly sliced
  • 8 corn tortillas 6 inch, warmed
  • ½ cup fresh cilantro, chopped
  • Lime wedges, for serving

Directions

  1. Season Pork: Pat ribs dry and rub with oil and generously season with 3 tbsp Weber® Bold Sweet & Smoky Seasoning. Let rest at room temperature for 10 minutes.
  2. Preheat Grill: For gas grills: Preheat to high heat 450°F. Reduce one side to medium-high for two-zone cooking.
  3. For charcoal grills: Light coals until ashed over. Arrange coals on one side for direct and indirect heat zones.
  4. Grill Pork: Sear ribs over direct heat for 3–5 minutes per side until golden brown. Move to indirect heat, close lid, and cook at 350°F until internal temp reaches 135–140°F (20–30 min).
  5. Finish & Rest: Return ribs to direct heat, baste with butter, and grill until internal temp reaches 145°F –150°F. Remove, tent with foil, and rest 10 minutes. Slice thinly.
  6. Sauté Peppers & Onions: While pork rests, heat a cast-iron skillet over medium heat. Add 1 tbsp olive oil, bell peppers, and onions. Season with 1 tsp Weber® Bold Sweet & Smoky Seasoning. Sauté 5–7 minutes until softened and slightly charred.
  7. Assemble Tacos: Fill warm tortillas with sliced pork. Top with peppers, onions, and fresh cilantro. Serve with lime wedges.
