Ingredients
- 1 lb ground beef (80/20 blend)
- 4 cheddar cheese cubes
- 8 strips bacon
- 2 tbsp Weber® Red, White & BBQ Seasoning
- 4 brioche buns, toasted
- 1 tomato, sliced
- 4 leaves Butter lettuce leaves
- 4 tbsp Mayonnaise
Juicy beef patties stuffed with cheddar cheese, wrapped in crispy bacon, and Weber® Red, White & BBQ™ Seasoning, make this burger a showstopper. Served on toasted brioche buns with fresh lettuce, tomato, and creamy mayo, it’s the ultimate backyard burger.
Directions
- Prepare Grill: Preheat grill to medium-high heat 375°F–425°F. Set up for indirect cooking.
- Assemble Stuffed Patties: Divide ground beef into 8 equal portions and flatten into thin patties.
- On a cutting board, weave 4 strips of bacon into a lattice pattern. Place one patty in the center of the bacon weave, top with 2 cheddar cheese cubes, and cover with a second patty. Pinch the edges to seal the cheese inside.
- Fold the bacon weave over the patty, securing it with toothpicks if necessary. Generously season the entire patty with Weber® Red, White & BBQ Seasoning. Repeat for remaining patties.
- Grill Burgers: Place bacon-wrapped patties on the grill. Start over indirect heat and cook for 8–10 minutes per side, flipping carefully to avoid breaking the bacon weave.
- Finish the patties over direct heat for 2–3 minutes per side to crisp the bacon. Use a meat thermometer to ensure the internal temperature reaches 160°F and the cheese inside is melted.
- Assemble Burgers: Spread mayonnaise on the top and bottom of each toasted brioche bun. Add lettuce and a slice of tomato to the bottom bun, then top with a bacon-wrapped patty. Cover with the top bun and serve immediately.
Tips & Tricks
- For an even cook and crispy bacon, grill the burgers over indirect heat for the first half of the cooking time before finishing directly over the flames.
