Ingredients

  • For Artichokes
  • 4–5 artichokes, trimmed, halved, and boiled for 10 minutes
  • 2 tbsp olive oil
  • 2 tbsp Weber® Roasted Garlic and Herb Seasoning
  • 2 lemons, halved (1 for boiling, 1 for serving)
  • For Lemon Herb Aioli
  • 1 cup mayonnaise
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp capers, finely chopped
  • 1 tsp fresh parsley, finely chopped
  • ½ tsp garlic, minced
  • 1 tsp Weber® Roasted Garlic and Herb Seasoning
  • ¼ tsp ground white pepper
Grilled artichokes brushed with Weber® Roasted Garlic and Herb Seasoning, paired with a tangy lemon herb aioli, create a show-stopping appetizer or side dish that’s bursting with freshness and flavor.

Directions

  1. Boil and Prepare Artichokes: Bring a large pot of water to a boil and squeeze the juice of 1 lemon into the water. Add artichokes and boil for 10 minutes. Drain and pat dry.
  2. Prepare Lemon Herb Aioli: In a bowl, whisk together mayonnaise, lemon juice, lemon zest, capers, parsley, garlic, Weber® Roasted Garlic and Herb Seasoning, and ground white pepper. Cover and refrigerate until ready to serve.
  3. Grill Artichokes: Preheat grill to medium-high heat (375°F–400°F).
  4. Brush artichokes with olive oil and season generously with Weber® Roasted Garlic and Herb Seasoning.
  5. Place artichokes cut side down on the grill. Cook for 5–6 minutes, or until grill marks appear and the artichokes are tender. Remove from grill and let cool slightly.
  6. Serve: Arrange artichokes on a serving platter and garnish with fresh lemon wedges. Serve warm with the lemon herb aioli on the side for dipping.

  • For perfectly tender artichokes, boil them with a halved lemon in the water to infuse subtle citrus notes before grilling.
