Ingredients
- For Artichokes
- 4–5 artichokes, trimmed, halved, and boiled for 10 minutes
- 2 tbsp olive oil
- 2 tbsp Weber® Roasted Garlic and Herb Seasoning
- 2 lemons, halved (1 for boiling, 1 for serving)
- For Lemon Herb Aioli
- 1 cup mayonnaise
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tbsp capers, finely chopped
- 1 tsp fresh parsley, finely chopped
- ½ tsp garlic, minced
- 1 tsp Weber® Roasted Garlic and Herb Seasoning
- ¼ tsp ground white pepper
Grilled artichokes brushed with Weber® Roasted Garlic and Herb Seasoning, paired with a tangy lemon herb aioli, create a show-stopping appetizer or side dish that’s bursting with freshness and flavor.
Directions
- Boil and Prepare Artichokes: Bring a large pot of water to a boil and squeeze the juice of 1 lemon into the water. Add artichokes and boil for 10 minutes. Drain and pat dry.
- Prepare Lemon Herb Aioli: In a bowl, whisk together mayonnaise, lemon juice, lemon zest, capers, parsley, garlic, Weber® Roasted Garlic and Herb Seasoning, and ground white pepper. Cover and refrigerate until ready to serve.
- Grill Artichokes: Preheat grill to medium-high heat (375°F–400°F).
- Brush artichokes with olive oil and season generously with Weber® Roasted Garlic and Herb Seasoning.
- Place artichokes cut side down on the grill. Cook for 5–6 minutes, or until grill marks appear and the artichokes are tender. Remove from grill and let cool slightly.
- Serve: Arrange artichokes on a serving platter and garnish with fresh lemon wedges. Serve warm with the lemon herb aioli on the side for dipping.
