Ingredients
- 8 oz whipped cream cheese, room temperature
- 8 slices thick-cut bacon, halved vertically
- 7 oz summer sausage, sliced into rings
- ¼ cup Weber® Cowboy Seasoning Rub
TA smoky, savory appetizer featuring summer sausage wrapped in crispy bacon, topped with a seasoned cream cheese mixture, and cooked to perfection with Weber® Cowboy Seasoning Rub.
Directions
- Prepare smoker: Preheat smoker or grill to medium heat, 350°F–400°F, with a grill pan over direct heat. Ensure the grill pan is clean and ready for cooking.
- Prepare cream cheese: In a large bowl, mix cream cheese with Weber® Cowboy Seasoning Rub until well combined. Transfer the mixture to a plastic bag and freeze for 30 minutes to firm up.
- Assemble pig shots: Cut the summer sausage into ½-inch thick rings. Wrap each ring with a halved bacon strip, forming a cup, and secure with a toothpick. Snip one corner of the plastic bag and pipe a dollop of the chilled cream cheese mixture into each bacon-wrapped sausage cup.
- Smoke pig shots: Arrange the pig shots side by side in the grill pan. Place the pan in the preheated smoker and cook for 35–45 minutes, or until the bacon is crispy and browned.
- Serve: Remove from the smoker and let cool slightly. Serve warm and enjoy the perfect blend of smoky, creamy, and savory flavors!
Tips & Tricks
- For a sweet and smoky glaze, brush the pig shots with Weber® Sweet & Thick Original BBQ Sauce during the last 10 minutes of smoking.
