- 1 package Weber® Just Add Juice® Garlic & Herb Marinade Mix
- ½ cup lemon juice
- 1 lb boneless, skinless chicken breasts
- Bruschetta Topping
- 4 plum tomatoes, seeded and chopped
- 3 cloves garlic, finely chopped
- 2 tbsp fresh basil, finely chopped
- 3 tbsp balsamic vinaigrette
- 2 tbsp Parmesan cheese, shredded

Directions
- Marinate Chicken: In a resealable plastic bag, combine the marinade mix and lemon juice. Mix well, then add chicken, turning to coat evenly. Seal the bag and marinate in the refrigerator for 30 minutes.
- Prepare Bruschetta: In a medium bowl, combine the tomatoes, garlic, basil, balsamic vinaigrette, and Parmesan cheese.
- Mix well and refrigerate until ready to serve. The bruschetta topping can be made up to one day ahead.
- Grill Chicken: Preheat grill to medium heat 350°F–400°F.
- Remove chicken from the marinade and discard the remaining marinade.
- Grill chicken over direct medium heat for 12–16 minutes, turning once, until cooked through and the internal temperature reaches 165°F.
- Assemble and Serve: Place the grilled chicken on a serving plate and top each piece with a generous portion of bruschetta. Serve immediately.
