  • Garlic and Herb Chicken
  • 1 package Weber® Just Add Juice® Garlic & Herb Marinade Mix
  • ½ cup lemon juice
  • 1 lb boneless, skinless chicken breasts
  • Bruschetta Topping
  • 4 plum tomatoes, seeded and chopped
  • 3 cloves garlic, finely chopped
  • 2 tbsp fresh basil, finely chopped
  • 3 tbsp balsamic vinaigrette
  • 2 tbsp Parmesan cheese, shredded
This vibrant dish features juicy garlic and herb-marinated chicken topped with a fresh, flavorful bruschetta mix. Perfect as a main course, or easily transformed into a sandwich or salad for versatile enjoyment! |

Directions

  1. Marinate Chicken: In a resealable plastic bag, combine the marinade mix and lemon juice. Mix well, then add chicken, turning to coat evenly. Seal the bag and marinate in the refrigerator for 30 minutes.
  2. Prepare Bruschetta: In a medium bowl, combine the tomatoes, garlic, basil, balsamic vinaigrette, and Parmesan cheese.
  3. Mix well and refrigerate until ready to serve. The bruschetta topping can be made up to one day ahead.
  4. Grill Chicken: Preheat grill to medium heat 350°F–400°F.
  5. Remove chicken from the marinade and discard the remaining marinade.
  6. Grill chicken over direct medium heat for 12–16 minutes, turning once, until cooked through and the internal temperature reaches 165°F.
  7. Assemble and Serve: Place the grilled chicken on a serving plate and top each piece with a generous portion of bruschetta. Serve immediately.

  • This dish can easily be transformed into a sandwich by layering the chicken and bruschetta topping on a toasted ciabatta roll or served over a bed of mixed greens for a flavorful salad.
