Ingredients
- Slaw
- 6 cups coleslaw mix
- ½ cup mayonnaise
- 1 tbsp milk
- ¼ cup sliced green onions
- 2 tsp parsley flakes
- 1 tbsp Weber® Smoky Brown Sugar Rub
- Sandwich
- 8 boneless, skinless chicken thighs
- 2 tbsp Weber® Smoky Brown Sugar Rub
- 4 sandwich rolls

Directions
- Prepare Slaw: In a large bowl, combine coleslaw mix, mayonnaise, milk, green onions, parsley, and 1 tbsp Weber® Smoky Brown Sugar Rub.
- Mix well and chill in the refrigerator until ready to serve.
- Grill Chicken: Preheat the grill to medium heat 350°F–400°F.
- Trim visible fat from chicken thighs and generously season both sides with 2 tbspWeber® Smoky Brown Sugar Rub.
- Place chicken on the grill over direct medium heat and cook for 10–12 minutes, turning once, until fully cooked and the internal temperature reaches at least 170°F.
- Remove chicken from the grill, cover with foil, and let rest for 5 minutes.
- Toast Rolls: Place sandwich rolls on the grill and toast for 2–3 minutes, until lightly browned.
- Assemble Sandwiches: Using two forks, shred grilled chicken into bite-sized pieces.
- Portion chicken onto the bottom half of each toasted roll.
- Top with a generous helping of slaw. Cover with the top roll and serve immediately.
