Directions

  1. Prepare Slaw: In a large bowl, combine coleslaw mix, mayonnaise, milk, green onions, parsley, and 1 tbsp Weber® Smoky Brown Sugar Rub.
  2. Mix well and chill in the refrigerator until ready to serve.
  3. Grill Chicken: Preheat the grill to medium heat 350°F–400°F.
  4. Trim visible fat from chicken thighs and generously season both sides with 2 tbspWeber® Smoky Brown Sugar Rub.
  5. Place chicken on the grill over direct medium heat and cook for 10–12 minutes, turning once, until fully cooked and the internal temperature reaches at least 170°F.
  6. Remove chicken from the grill, cover with foil, and let rest for 5 minutes.
  7. Toast Rolls: Place sandwich rolls on the grill and toast for 2–3 minutes, until lightly browned.
  8. Assemble Sandwiches: Using two forks, shred grilled chicken into bite-sized pieces.
  9. Portion chicken onto the bottom half of each toasted roll.
  10. Top with a generous helping of slaw. Cover with the top roll and serve immediately.
