  • Mushroom Marinade
  • ⅓ cup olive oil
  • 1½ tsp balsamic vinegar

  • 4 portobello mushroom caps
  • Burgers
  • 4 slices Swiss cheese
  • 4 brioche burger buns, toasted
  • 4 leaves butter lettuce
  • 4 slices tomato
  • 4 slices red onion
  • 4 tbsp mayonnaise
Take your veggie burger game to the next level with this Grilled Portobello Swiss Burger. Juicy, marinated portobello mushrooms are grilled to perfection, topped with melted Swiss cheese, fresh vegetables, and creamy mayonnaise, all served on buttery brioche buns. This hearty, flavorful burger is a satisfying alternative to traditional beef burgers.

Directions

  1. Prepare Marinade: In a large bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, and Weber® Flavor Bomb Burger Seasoning until fully combined. Coat each mushroom cap thoroughly with the marinade, including the gills. Let marinate for 15–30 minutes if time allows.
  2. Preheat Grill: Preheat grill to medium heat, 350°F–400°F. Place a grill pan on the grates.
  3. Grill Mushrooms: Place the marinated mushrooms on the grill pan with the gills facing up. Grill for 4–5 minutes per side. When flipping the mushrooms, place a slice of Swiss cheese on top to melt during the final minutes. Once the cheese is melted, remove mushrooms from the grill.
  4. Assemble Burgers: Spread 1 tbsp mayonnaise on the bottom half of each toasted brioche bun. Add a slice of tomato, a leaf of butter lettuce, the grilled mushroom with melted Swiss cheese, and a slice of red onion. Top with the remaining bun half.
  5. Serve: Serve warm and enjoy this savory, smoky twist on a classic burger!
