Ingredients

Juicy lobster tails infused with smoky flavor, seasoned with Weber® Zesty Lemon™ Seasoning, and finished with a rich lemon-parmesan butter glaze. A luxurious and simple dish perfect for any special occasion.

Directions

  1. Prepare lobster tails: Using kitchen shears, cut down the center of the lobster shell from the top to the tail, avoiding the meat. Gently use a spoon to separate the meat from the shell underneath. Carefully lift the meat out while keeping it attached at the base of the tail and rest it on top of the shell. Repeat for all lobster tails.
  2. Season lobster: In a small bowl, mix Weber® Zesty Lemon™ Seasoning, and oil into a thin paste. Brush the mixture generously over the lobster meat.
  3. Preheat smoker: Preheat your smoker to 375°F for indirect cooking.
  4. Smoke lobster: Place the lobster tails on the smoker and cook indirectly for 20–30 minutes, or until the meat turns from translucent to opaque white.
  5. Make lemon-parmesan butter: While the lobster is cooking, melt the butter in a small bowl. Stir in parsley, Parmesan cheese, garlic, red pepper flakes, Weber® Zesty Lemon™ Seasoning, and lemon juice until well combined.
  6. Glaze and serve: When the lobster tails are nearly done, brush them lightly with the lemon-parmesan butter glaze. Reserve some glaze for dipping. Remove lobster tails from the smoker, serve immediately, and enjoy with the remaining butter on the side.

Tips & Tricks

  • If preparing on a grill instead of a smoker, set up for two-zone cooking with direct and indirect heat. Grill the lobster tails over indirect heat at 375°F, and for a slightly charred finish, sear them meat-side down over direct heat for 1–2 minutes before serving.
