Sweet and Smoky Baby Back Ribs

Ingredients

These dry-brined ribs deliver deep smoky-sweet flavor with Weber® BOLD Smoky & Sweet Seasoning. Slow-grilled for tenderness, they develop a rich bark and juicy bite without the need for sauce.

Directions

  1. Season & Brine: Remove membrane from back of ribs, pat dry, and coat ribs generously with Weber® BOLD Smoky & Sweet Seasoning. Cover and refrigerate 4–12 hours.(Optional)
  2. Preheat Grill: Set up for indirect medium heat (275°–300°F), leaving some burners off.
  3. Grill Ribs: Place ribs bone-side down on the cool zone. Close lid and cook 2.5–3 hours, rotating occasionally, until meat pulls back ¼ inch from the bone and internal temp reaches 190°–203°F.
  4. Rest & Serve: Let ribs rest 10 minutes. Slice and serve with melted butter mixed with 1 tbsp Weber® BOLD Smoky & Sweet Seasoning.

Tips & Tricks

  • Let the ribs rest uncovered in the fridge for the last hour of brining—this helps form a better bark and improves caramelization on the grill.
